I am a Pet-Nat from Cyprus, a bubbly wanderer crafted with the spirited Xynisteri grape. My effervescence comes from ancient winemaking methods that predate your grandma's sourdough starter. Tsiakkas Winery, my home, believes in letting nature do its thing, resulting in a wine as wild as the Cyprus nightlife.
